Everybody knows that bacon is nature’s most perfect food, and makes everything taste better. In bit form, they are a convenient way to add a little goodness to meals like salads, baked potatoes, and even ice cream (seriously).

Unfortunately, most store bought bacon bits  taste more like MSG flavored fruity pebbles than bacon. For the best results and flavor, you should make them yourself.


Tools

Chef knife
Large nonstick pan
Heatproof spatula
Large fine mesh strainer or colander
Heatproof bowl
Paper towels
Plate


Ingredients

1 – 2 lbs. thick cut bacon


Directions

Before cutting the bacon, make sure your knife is very sharp. The bacon will be easier to cut if it’s very cold, you can put in the freezer for 10 – 20 mins. ahead of time.

Stack 4 – 5 strips of bacon at a time and cut into lengthwise into thirds. Chop in the other direction every quarter inch or so to form small cubes.

Place all the chopped cubes into pan and place on stove set to medium low heat.

Stir every few minutes to prevent bottom from overcooking. Continue to cook until bacon is crispy. You’ll know it’s ready when the bubbles in the grease start to get foamy.

Carefully strain grease through fine mesh strainer or colander into a heatproof bowl. Transfer bacon onto a plate with several paper towels to absorb excess grease. Let bacon cool for several minutes.
