Part breakfast, part guilty pleasure. This egg toast is oozing with cheese and topped with bacon.
Tools
Medium nonstick pan w/lid
Heatproof spatula or turner
Ingredients
Large slice of your choice of bread
1/2 tbsp. butter
2 large eggs
1/2 cup grated medium cheddar cheese
1/4 cup bacon bits (see recipe)
Fresh ground black pepper
Directions
Carefully cut out two small holes (about 1 1/2 inches in diameter) side by side in the bread. Place pan on stove at medium heat and melt butter until it just starts to brown.
Put the bread in the pan and carefully crack eggs onto bread so the the yolks are intact and resting inside the holes. Gently spread the egg whites around so the bread is covered. Cook until egg whites start to brown on the bottom.
Gently flip the bread over, making sure to keep the yolks intact. Sprinkle on the shredded cheese, and bacon. Reduce heat to low and cover pan.
Continue to cook on low until cheese is melted. Finish with pepper and serve.
